Or even spinach would do

Cod’s roe – you don’t need caviar every day –
dried cod

tripe – I must cook you my tripe : dann wirst du verrückt
fish and chips and eels too
but now pigs’ ears is top of the bill tonight. Cooked for 1/2 hour
then cut in strips like spaghetti and laid on a pudding of peas
with a small onion cut in fine pieces stirred through it and a
bit of treacle
haggis and turnips and swedes and parsnips too.
(Ich bin ausgelaugt. I’ve lost 10 pounds. All I get to eat is pap.)
– Or soda bread with Irish butter and not too little black pudding
and a but of pepper…oxbrain with pepper, you know, but the best
brain is pig’s brain, parsley, pepper with black bread,
that’s fantastic.
That’s the day tomorrow ? – Wednesday. Tuesday is the best day
to buy brain because Monday is slaughter day and by Wednesday
the specialists have take it all away.

Morning early
across Newmilk Lake she went.
Beef-lard, my steed,
an excellent stallion
That increases studs;
A guard against toil
Is the saddle of cheese
upon his back.
A large necklace of delicious cheeseacurds
Around his back;
His halter and traces all
Of fresh butter
