would do it, with milk and butter.

but now pigs’ ears is top of the bill tonight. Cooked for 1/2 hour
then cut in strips like spaghetti and laid on a pudding of peas
with a small onion cut in fine pieces stirred through it and a
bit of treacle
haggis and turnips and swedes and parsnips too.

– Or soda bread with Irish butter and not too little black pudding
and a but of pepper…oxbrain with pepper, you know, but the best
brain is pig’s brain, parsley, pepper with black bread,
that’s fantastic.
That’s the day tomorrow ? – Wednesday. Tuesday is the best day
to buy brain because Monday is slaughter day and by Wednesday
the specialists have take it all away.
